The Islands of Flavor: Gastronomy Across the Balearic and Canary Islands

By Turespaña

Spain’s islands are home to some of the country’s most distinctive culinary traditions. From the Mediterranean flavors of the Balearic Islands to the volcanic cuisine of the Canary Islands, gastronomy here is deeply connected to the landscape, the sea and centuries of island life.

The Balearic Islands: Mediterranean Tradition on a Plate

The Balearic Islands are known for iconic specialties such as Maó cheese, sobrasada and ensaimadas — products that perfectly capture the essence of Mediterranean island cuisine.

Maó Cheese: Menorca’s Signature Taste

Maó cheese is one of Menorca’s most famous products. Made from cow’s milk, its flavor ranges from soft and creamy to rich and intense depending on the curing process.

Influenced by sea breezes and local pastures, it has become one of the defining symbols of Menorcan gastronomy.

Sobrasada, Mallorca’s traditional paprika-cured sausage, is celebrated for its rich flavor and smooth texture. Equally iconic is the ensaimada, the island’s light spiral pastry dusted with powdered sugar.

One of Mallorca’s most traditional combinations is ensaimada filled with sobrasada — a perfect balance of sweet and savory that reflects the originality of Balearic cuisine.

The Canary Islands: Bold, Vibrant and Authentic

Canarian cuisine is simple, colorful and full of flavor, shaped by volcanic landscapes, Atlantic waters and local traditions.

From papas arrugadas with spicy mojo picón to fresh fish, slow-cooked stews and the ever-present gofio, every dish reflects the culture and history of the islands. Tropical fruits, volcanic wines and desserts rich in almonds and honey complete a cuisine that feels both rustic and unforgettable.

The Canary Islands blend Spanish heritage with unique Atlantic influences, creating flavors that are vibrant, comforting and deeply authentic.

La Geria: Wine Born from Volcanoes

Photo courtesy of Tourist Office of Spain in New York / © Turismo Lanzarote

Among the Canary Islands, Lanzarote stands out for one of Spain’s most extraordinary wine regions. In the vineyards of La Geria, vines grow in deep hollows carved into black volcanic ash and protected by curved stone walls from Atlantic winds.

This ingenious method allows the plants to capture moisture in one of Europe’s driest climates, producing wines with a distinctive volcanic character. The contrast of green vines against endless lava fields creates one of the world’s most spectacular wine landscapes.

From Maó cheese and ensaimadas to volcanic wines and Canarian specialties, the Balearic and Canary Islands offer a gastronomy shaped by nature, tradition and island life — authentic flavors that capture the true spirit of Spain’s islands.

About Turespaña

Turespaña is the official Spanish Tourism Board, dedicated to promoting Spain as a sustainable travel destination.
A Tale of Two Cities on Thai Cuisine

by Ricko Tindage, Director of Sales and Marketing at Elite Voyages

The fan favorite HBO hit TV show White Lotus‘ season 3 in Thailand proved to be a runaway success. The series filmed at Four Seasons and Anantara resorts in Koh Samui and Phuket has triggered a significant “White Lotus Effect,” driving massive surges in luxury bookings (up 590% for some properties) and overall tourism interest from US and European markets.

The White Lotus Season 3 will join the legacy of Thailand’s long list of many Hollywood hit movies such as The Man with the Golden Gun, The Beach, and The Hangover 2 (pictured below).

The Hangover 2 Suite at LeBua Tower Hotel in Bangkok, Thailand (Photo: Courtesy of Ricko Tindage)

While Thailand as we know it has the most beautiful landscapes, hence, the movie locations above chosen by Hollywood, they are also blessed with amazing culture and friendly people, however, their cuisine is next level. That’s how this blog will focus on this amazing gastronomy. This blog will dissect how Thai foods in America and worldwide are gaining popularity second only to Chinese food.

My hometown of Los Angeles can be proud of calling themselves the place where Thai Food started its popularity. Unlike these days, in the early 80s finding good Thai restaurants were a challenge. Surprisingly, Hollywood played a big role in making Thai Food such a popular cuisine in America. Hence, you will find LA’s designated Thai Town in the Hollywood area. One such restaurant in Los Angeles with a strong Hollywood connection is Jitlada, a Southern Thai-style cooking. Siblings Jazz Singsanong and Tui Sungkamee are chef-owners of Jitlada. When Sungkamee passed away in 2017, Singsanong was the sole owner of this Thai restaurant to the stars.

In the late 70s, while living in Jakarta, Indonesia during my college year in hotel management, I had the opportunity to do my internship at Brussels Hilton in Brussels, Belgium. Since the internship does not pay, to earn money I moonlighted in a restaurant owned by the sister of my co-worker at the hotel and her husband. This brand new and small Thai restaurant next to an antique shop on Chaussee de Waterloo is called The Blue Elephant. This was my first introduction to Thai food ever. Unbeknownst to me, and upon my return to the city in 1995, the restaurant had become an international success with five restaurants in London, Paris, Copenhagen, and Bangkok besides the original location in Brussels.

Founder of Blue Elephant Group, Mrs. Nooror SOMANY-STEPPE is recognized as a leading Ambassador of Thai Cuisine and one of the five best Thai Chefs in Thailand. Mrs. Somany-Steppe was indeed the same restaurant owner when I was working part-time in her small restaurant in Brussels back in 1980. Now, she’s a world-renowned celebrity chef with restaurants in Bangkok (its flagship restaurant), Phuket, Malta, and Copenhagen. The restaurants in Bangkok and Phuket are also equipped with a cooking school where a certificate will be given at the end of the class. I was lucky enough to visit its two beautiful locations in Bangkok and Phuket (pictured below) during my last visit to Thailand in 2018.

The Tourism Authority of Thailand (TAT) has many projects overseas to keep promoting Thailand as a tourist destination and Thai cuisine worldwide, and Mrs. Somany Steppe is one of their most important ambassadors. Besides restaurants, Blue Elephant also produces Thai cooking mixes you can use at home, and you can find them easily in the grocery aisles near you.

Uncovering the many sides of India: 5 insider experiences to have in this country of contrasts

By: Jamie Gallerani, EF Go Ahead Tours

In India, almost everything is a dance. Here, balance is found as you go from the bustling, rickshaw-lined streets of Delhi to the serene backwaters of Kerala, where palm trees dot emerald shores. Along the way, royal palaces sidle up to nature preserves, daily life reaches a crescendo at vibrant markets, and spirituality shines in Hindu temples, Islamic mosques, and Sikh community kitchens. With 28 states, 22 official languages, and 1.4 billion people, the country is like a ruby with endless facets: varied and impossible to pin down. Ready to see something new everywhere you look? Here are five experiences that will weave you into the layered fabric of India.

Soaking up Old Delhi from the seat of a rickshaw is part of the adventure / Photo by Ravi Sharma, courtesy of EF Go Ahead Tours

Zip through Old Delhi’s bustling streets on a rickshaw

Frenetic vibrancy bursts from every corner of India’s big cities, and one of the best ways to witness it is from the seat of a rickshaw. There’s nothing quite like being whisked into the heart of it all on these motorized, three-wheeled vehicles, which offer an in-the-thick-of-it vantage point that you can’t get any other way. One unforgettable place to ride through? The most storied neighborhood of India’s capital city: Old Delhi. Here, history spills from narrow streets lined with tangled telephone wires, vendors hawk rounds of flatbread called parathas from Moonlight Square—and you’ll discover that how you get around is just as interesting as what you see.

Watch as fire is offered to the goddess of the Ganges

From the playful toss of colorful powder at Holi celebrations to candlelit flower bowls floating down holy rivers, spiritual moments spring up everywhere in India. Want to bear witness to one notable practice? Each evening in the cities of Varanasi, Haridwar, and Rishikesh, the bathing steps along the Ganges are the place to watch one of the most sacred Hindu rituals: the Aarti, a ceremony of light devoted to the goddess Ganga. During this illuminated, prayer-filled event, bells and conch shells sound, incense swirls, and mantras are chanted as priests offer fire to the deity using large brass lamps. Purification and gratitude underpin this daily ceremony, which is capped off as devotees release small oil lamps called diyas onto the river.

Go behind Bollywood’s silver screen in Mumbai

India’s glittery side shines in Mumbai (formerly Bombay), where Bollywood got its start. The name of the Indian film industry is a Bombay-Hollywood mash-up that’s become synonymous with some of the most colorful moments in cinema, from Kashmiri musicals and comedies to Rajasthani dramas and romances. Most of the storylines play out alongside elaborate song and synchronized dance numbers, and you can get a behind-the-scenes peek while touring Film City or taking a Bollywood dance class in the city that launched this cinematic art form.

Seek out Bengal tigers on a Ranthambore safari

The busy streets of India only tell one side of the country’s story. Beyond the mesmerizing rush, natural beauty unfurls in the form of Himalayan peaks, sprawling deserts, South Goa beaches—and the world’s largest population of Bengal tigers. Dreaming of spotting the country’s national animal? Lush nature preserves like Ranthambore National Park are calling. This royal-hunting-ground-turned-tiger-reserve is your place to step into quietude on a guided safari (and, if you’re lucky, to catch a glimpse of one of India’s most notable residents).

Head south to visit the spice capital of India

Of all the amazing things India offers, plates of culinary greatness sit right at the top. There are the richer, creamier, ghee-cooked dishes in the north. Think: tandoori meats and savory dal scooped up with naan. Then, there are the lighter, spicier, more aromatic spreads in the south, which are often made with coconut oil and served with rice. It’s here in southern India where Kerala reigns as the country’s spice capital, and where markets are dotted with heaping piles of cinnamon, star anise, cardamom, pepper, turmeric, and more. Visit for yourself to find that each of India’s far-flung corners offers its own regional flavors—and that some of the best spring up along the southern backwaters.

One of Spain’s warmest places for winter sun: Guide to discover Lanzarote

Lanzarote, in the Canary Islands, is blessed with the best of Europe’s winter weather.

Winter feels different in Lanzarote.

Thanks to its geography, the island of Lanzarote is under stable and pleasant temperatures all year round: mild winters and summers, with an average of 22 and 26 degrees Celsius (71-78 degrees Fahrenheit) and far from the extreme temperatures that dominate the European continent. It’s usually described as an eternal spring-weather like!

We’ve compiled some plans for those adventurous travelers seeking experiences that offer authentic insight into a community’s way of life.

César Manrique and Tourist Centers

César Manrique (1919-1992) was a local artist inspired by the incredible natural beauty of his homeland. Lanzarote holds the secrets of living and not fighting against natural elements. “Being born here influences any moderately sensitive being,” with this wisdom, Manrique reflected his work creating The Centres for Art, Culture and Tourism.

One of Manrique’s spectacular projects blending art and nature is Jameos del Agua. These magnificent caves sit in a seven-kilometer-long lava tunnel formed some 25,000 years ago with some parts that collapsed forming some sorts of ‘holes’ in the ceiling (jameos). Here, Manrique represented Lanzarote’s landscape most iconic colors: blue (ocean), green (vegetation), red (volcanic eruptions) and white (houses walls and architecture).

Rising from the volcanic ashes – wine at La Geria landscape

After the volcanic eruptions, the island’s farmers had to develop clever engineering to adapt cropping methods to the landscape that was now covered in ashes. Since grapevines could survive, the secret ingredient was the dreaded ash itself. With conical hollows built into layers of volcanic ash – three meters wide by three to four meters deep -, collecting the sparse rain and dew, and funneling the water to the plant’s root, the volcanic ashes draw moisture from the air and retain it in the soil. The low semicircular wall, built from lava stones, shields the vines from the winds creating a landscape like no other in the world!

In the Protected Landscape of La Geria one can find several bodegas (wineries) which sell international award-winning wines, like some of the best-known wines of the malvasia grape.

Gastronomy

With rain so rare, both viticulture and agriculture exist in Lanzarote through the daily miracle of crops sprouting from the black grit found almost everywhere. Plum, firm and with concentrated flavors, grains and vegetables highlight local stews.

The Atlantic surrounding the island provides seasonally local seafood and fresh-caught fish together with La Santa prawns, a culinary delicacy. The most common variety of meats include pork, chicken, rabbit and goat.

Papas arrugadas, or Canarian wrinkly potatoes, are a must in regional cuisine! They are usually served with red mojo sauce, made from either red bell peppers or chili peppers, and green mojo sauce, made from coriander and/or parsley.

La Graciosa

Small, quiet, with no paved roads and barely inhabited, La Graciosa is just a half an hour by boat from Lanzarote. There are wonderful, deserted beaches, turquoise water and an unspoiled landscape that make it the perfect place to enjoy a few days of calm and relaxation.

An island rooted in sustainability

The unique model of development that the island has experienced, with sustained economic growth and clear protection and conservation of nature and the environment, has helped to obtain in 1993 the declaration of UNESCO’s Biosphere Reserve. Such recognition was the definitive confirmation of the islanders’ continued commitment to respect for and conservation of their environment.

A Culinary Journey Across Borders: How Food Connects Us to the World

By Cindy Clarke, Tauck

Food has long served as a delicious passport to other cultures, revealing the traditions, values, and rhythms of life in cultures around the world. Whether you are hand-rolling pasta in an Italian kitchen with an affable chef, sipping wine with a vintner among the sun-drenched vines of Tuscany, sampling just-caught sushi at a bustling market in Tokyo, or savoring the hearty comfort of Guinness stew in a firelit Irish pub, new friends all around, you’re not just enjoying a meal—you’re taking part in a legacy handed down through generations.

And the journey doesn’t end there. Bring those flavors home and let them transport you—one bite, one aroma, one memory at a time. From wood-fired Italian pizza to delicate Viennese strüdel, Spanish tapas to French crêpes, zesty Middle Eastern tabbouleh to handmade Mexican tamales, buttery Maine lobster to earthy French truffles, the tastes of travel linger long after the trip is over, evoking memories and cultural connections that can last a lifetime.

Lunch among the grapevines in Umbria / Photo courtesy of Tauck

Street markets, bustling with locally sourced flavors, tell tales of daily life around the world. Hop aboard a Vespa for an after-dark foodie tour of the lively street markets of Saigon, embodying the soul of the city in a diverse array of local treats and goods. Stroll through a farmer’s market in Avignon to select fresh ingredients for a chef-hosted cooking class tempting with fine French fare. Or enjoy handcrafted sausage smothered in homemade sauerkraut, hot mulled glühwein in hand like I did as I wandered through festive holiday markets along the Danube. These sensory experiences—scents, sounds, colors, tastes—can spring back to life the moment you find something familiar at home.

Local restaurants, from corner paladars in Cuba and neighborhood trattorias in Italy to chic French bistros and centuries-old English pubs, showcase recipes distinctive to their country and are a great way to meet the locals. Travel with local guides to visit chocolate shops, cheeseries, and olive oil farms where time-honored regional secrets are shared in tastings of products, locally produced and personally served by the proud people who made them. Dining on farm-to-table fare, sustainably grown and always authentic – think truffles that I saw being unearthed by specially trained dogs on my trip to Provence, vegetables and herbs freshly picked from my host’s, Catherine Fluvio, Irish garden for a savory soup that captured the season, or a flavor-rich lunch at the Slow Food University in the Langhe Hills of Piedmont – takes you back to those intimate, mindful moments you shared with surprising clarity.

Culinary workshops and cooking demonstrations offer more than just instruction—they’re an invitation to bring the world into your own kitchen. Vintners, bakers, and chefs teach you how to taste, pair and plate dishes that are as meaningful as they are delicious. Imagine the joy of recreating a recipe you learned abroad and sharing it with friends at a dinner party they’ll never forget.

Truffle hunting in Piedmont / Photo courtesy of Tauck

Home-hosted meals, whether they’re in a Viennese palace, a country château in Normandy, an Icelandic farmhouse, a baron’s Sicilian villa or a tea house in Kyoto, engender a genuine connection to the long-held traditions of the people you meet in the places you dine. And while you enjoy dishes that reflect the tastes and the times, the conversations and camaraderie you experience promise unforgettable memories too.

Exploring North America affords opportunities to work alongside lobstermen off the coast of Maine and savor the catch of the day, warm up to chiles at a cooking school in Santa Fe, go Creole in Louisiana, oystering on Prince Edward Island and maple sugarin’ in Quebec. Stays on western ranches wow with cowboy culture in chuckwagon cook outs and campfire s’mores. Coastal New England resorts welcome with summer clam bakes, and Hawaiian luaus are a feast of food and traditional dance you’ll long remember.

So, whether you want to immerse yourself in the history, the culture, the adventure or the natural treasures of the places you travel, you can discover it all in the local foods you eat. Served with heartfelt stories and smiles, it’s the best way I know to foster friendships, understanding and appreciation for the world around us while enjoying every bite.

Surrounded by Knowledge: Transforming client experience with authentic cultural connection

By Melissa DaSilva

Deputy Chief Executive Officer of TTC Tour Brands (Trafalgar, Insight Vacations, Brendan Vacations, Costsaver, Contiki, and Luxury Gold )

It’s undeniable: Modern travel has evolved beyond simply checking off bucket list items. Yes, travelers are hoping to visit their dream destinations and must-see sites, but that’s just one facet of their vacation. Those same guests also want deeper, more authentic connections with their destinations.

They said it. We heard it.

TTC Tour Brands has followed this culturally integrative mindset for decades, consistently drawing on our knowledge of global communities, 100+ years of experience and the passion of our Travel Directors and Local Specialists to bring our guests immersive, deeply real travel, offering guests moments they couldn’t find on their own.

Beyond being a hallmark of how we think about tour travel, by drawing on knowledge to inform authenticity, we progressively built our iconic, unforgettable moments like Be My Guest and MAKE TRAVEL MATTER® Experience into every tour.

It takes work to find just the right places, plates and people to give guests what they want. But the challenge is matching that with a connection they may have never considered, striking a balance between the unexpected, the authentic and often, the delicious.

Photo courtesy of TTC Tour Brands

Breaking Bread, Bridging Cultures

Foodie travel is easily one of the most significant trends that shows no signs of slowing down. It’s not just the rare dishes, upscale dining or the elite tables. There’s a strong demand among travelers for genuine and accessible dining experiences where guests can break bread together with local communities. Think “I want to eat where the locals eat,” and that’s where Trafalgar’s Be My Guest shines.

Be My Guest brings our guests into homes, restaurants, farms and orchards where real people, share their culture and heritage, with travelers and show their pride for what they do. They foster cultural exchange through food, making every bite a story worth telling.

Consistently a top “Must-Visit” destination, Italy is celebrated for its eating, and after a long day of touring the Vatican, seeing the ruins and tossing a coin into the Trevi Fountain, what a Be My Guest Experience brings is a sense of community, and a real “Famiglia Style” dining cultural experience. It’s not just eating dinner at the end of the day – it’s meeting the family who owns and operates the restaurant and sharing Nonna’s personal favorite pasta dish made just for the occasion with everyone in the group.

Photo courtesy of TTC Tour Brands

Amplifying Local Voices

In addition to exploring culture and heritage, embedded in the careful selection of our MAKE TRAVEL MATTER® Experiences is a focus on conservation, connection, cultural preservation, and also diversity and inclusion, and wildlife protection.

Connecting our guests with projects from TTC Tour Brands’ nonprofit TreadRight through MAKE TRAVEL MATTER® Experiences means their travel supports the communities in the places that we visit beyond just the high tourism centers.

These experiences bring cultures, traditions and heritage arts into focus such as traditional frame loom weaving atelier Laboratorio Giuditta Brozzetti in Italy, The Cristina Heeren Foundation of Flamenco Art in Spain, and the Warrior Women experience in Jasper, Canada.

Matricia Bauer founded Warrior Women to share educational Sturgeon Lake Cree First Nations women experiences to travelers based on traditions and learnings passed down within their community. It not only offers a different perspective for guests, but it allows the Warrior Women group the opportunity to put their traditions into practice, bringing outsiders into their culture for a rare look at customs nearly lost through colonialism.

Bauer has said that when tourists attend her events and are specifically interested in the work of Warrior Women, a visit becomes a reciprocal exchange providing a unique space for relationships to be formed, authentically.

“If colonization is defined as the lack of relationship, then decolonization is the creation of relationship, and tourism is the connector,” said Bauer recently. “I get to tell my story through my voice.”

In the delicate balance between solitude and connection lies a beautiful paradox: sometimes the richest solo journeys unfold within the embrace of a thoughtfully curated small group. Beyond the logistics of shared transportation and expertly planned routes, these intimate adventures offer solo travelers something far more valuable – a canvas for personal discovery painted with shared moments of wonder.

Local Connections That Solo Travel Rarely Unlocks

While independent travel offers freedom, small group journeys open doors that often remain closed to solo wanderers. Your local guide becomes more than just an expert – they’re a temporary member of your traveling family, sharing not just historical facts but personal stories, favorite hidden cafes, and introductions to local friends. Suddenly, you find yourself learning traditional Vietnamese cooking in a family kitchen in the Mekong Delta or harvesting fresh oysters alongside local fishermen in Croatia, experiences that would be nearly impossible to arrange on your own.

The Alchemy of Kindred Spirits

There’s something magical about finding yourself among fellow wanderers who, despite different paths that led them there, share your appetite for meaningful exploration. These small group journeys – typically just eight to 16 travelers – naturally attract curious souls from varied walks of life. Whether you’re sharing dawn observations of brown bears in Romania’s Carpathian forests or trading stories over wine in a centuries-old Tuscan estate, you’ll find yourself among people who value both grand vistas and quiet morning conversations about what those landscapes mean to each of us.

The Freedom of Perfect Planning

Here’s an unexpected twist: joining a small group adventure actually amplifies your independence. While the logistics are expertly handled, you maintain the freedom to set your own social rhythm. Spend a morning exploring a medieval town in solitude, then rejoin the group for an insider’s wine tasting experience in the afternoon. This balance of structure and spontaneity creates space for both personal reflection and shared discovery.

The Luxury of the Secret Season

Small group journeys excel at revealing destinations in their most authentic light, particularly during what others might consider the “wrong” time to visit. Picture Morocco in January, when tourist crowds have thinned and the Sahara’s fierce summer heat gives way to crisp, crystalline days. These quieter moments allow you to witness ancient traditions emerging unprompted, when local rhythms aren’t adjusted for tourist timetables. As a solo traveler within a small group, you’re uniquely positioned to step directly into the genuine fabric of local life.

A Natural Rhythm of Discovery

Perhaps most importantly, small group adventures offer solo travelers a perfect blend of challenge and comfort. Whether you’re wandering ancient footpaths or exploring by bicycle, skilled guides understand how to honor both the desire for personal achievement and the wisdom of taking time to absorb each moment. You’ll find your natural pace of exploration, guided by experts who quietly ensure every moment feels earned, authentic, and uniquely yours.

In the end, choosing a small group adventure as a solo traveler isn’t about compromising independence – it’s about amplifying the very essence of what makes solo travel transformative. It’s about finding yourself in those quiet moments between grand monuments, sharing stories that will echo long after the last passport stamp has dried, and discovering that sometimes the richest solo journeys are the ones we share with others who understand the art of traveling well.

Have you heard of Pancit, Lumpia, Adobo, and Sisig? These delectable dishes might have graced your social media feed or found their way to your plate at a Filipino restaurant. Yet, the Philippines is teeming with countless local dishes and beverages waiting to be discovered. After visiting countries other than the Philippines, I always crave for the famous Sinigang and Bulalo—both featured on the 2024 World’s Top 100 Soups. The rich flavors and the dedication that goes into these dishes truly warm the soul.

If this has ignited your craving for Filipino cuisine, let’s explore some exciting developments and new experiences in the Philippine food and gastronomy scene.

Sustainability in Philippine Food and Gastronomy Tourism

At the Philippine Department of Tourism, we are committed to promoting experiences that are not only delicious but also beneficial for the environment and the tourism industry as a whole. Under the National Tourism Development Plan (NTDP) 2023-2028, which serves as the blueprint of the industry under the administration of President Ferdinand R. Marcos, Jr., the Philippines is envisioned to become a “tourism powerhouse in Asia”, with tourism initiatives shifting to a whole-of-government approach and investing in long-term sustainability reforms.

Resilience, equality, and sustainability serve as our anchors in building deeper experiences for travelers. As global sustainability efforts gain momentum, the DOT under the leadership of Secretary Christina Garcia Frasco, is embracing this trend in enhancing further our sustainability initiatives. This shift is particularly evident in our development of Farm, Food and Gastronomy, and Cultural tourism experiences, where we work closely with our partners in both government and private sector in highlighting sustainable practices that are creating opportunities for local producers, communities, and visitors alike.

Thanks to the leadership of Secretary Frasco and the collaborative efforts of both public and private sectors, gastronomy tourism has blossomed into one of the most vibrant aspects of our tourism landscape. Last June, we took a bold step in showcasing this richness when the Philippines hosted the very first United Nations (UN) Tourism Regional Forum on Gastronomy Tourism for Asia and the Pacific where over 600 delegates from 43 countries were treated to a culinary journey, discovering the diverse and delightful tastes that define the Philippines.

It was an unforgettable event: from the far north to the south of the Philippines, chefs from every region came together, each bringing their own unique flavors to the table.

New Experiences to Enhance Your Philippine Food and Gastronomy Journey

1. Slow Food Community Experiences

The Philippines takes pride in its growing network of Slow Food Communities. By adopting the philosophy of good, clean, and fair food—freshly prepared with care—we create a deeper connection between people and their food. Guests from around the world can engage in cultural immersion and gain insights into local communities’ ways of life.

Don’t miss the Coffee Trail in Murcia, Negros Occidental, home to a Slow Food Coffee Coalition. This passionate group of farmers, entrepreneurs, and enthusiasts is dedicated to making coffee a sustainable force for good, benefiting both the environment and the communities that cultivate it. Renowned for its coffee-shaded farms, Murcia offers three trekking options tailored to different skill levels for an engaging experience:

Easy: Elevation of 470 meters, exploring the backyard coffee farm of the Cañete Family

Moderate: Elevation of 600 meters, involving a 1 hour and 45-minute walk

Advanced: Elevation of 970 meters, requiring a trek of 2.5 to 3.5 hours

Regardless of your chosen trek, you’ll learn about the region’s history, the Slow Food Coffee Coalition’s mission, and engage in hands-on activities like coffee pruning and dehulling. You may also participate in preparing a delicious lunch using seasonal, locally sourced ingredients.

Additional Slow Food experiences can also be found in the Cordillera Administrative Region, with slow food communities and activities being part of the culinary tours. More slow food offerings from across the country is anticipated as we host the Terra Madre Asia and the Pacific in 2025 in Bacolod City, Negros Occidental, which has now become the official hub of Slow Food in Asia Pacific!

2. Market Tours (Public Market Tours)

The Philippines is home to vibrant public markets known as “palengke(s),” serving as essential hubs for families and communities. These markets offer a rich array of goods—from fresh farm produce, fishes and meats to dry goods and lifestyle products. Filipinos frequent the palengke not just for shopping but for the communal experience they provide. It’s a space where locals gather to share stories and enjoy traditional snacks like suman (elongated rice cake), tsokolate (hot chocolate), puto (steamed rice cake), and kakanin (glutinous rice cakes).

Recognizing their cultural significance, palengke(s) are now becoming exciting tourist attractions. Visitors gain authentic insights into Filipino life, observing community interactions and discovering cherished local goods. Locals act as cultural ambassadors, enriching the visitor experience by sharing stories about these marketplaces.

The introduction of “Palengke Tourism” not only bolsters the tourism industry but also promotes sustainability and creates new opportunities for local communities. When visiting the Philippines, you may explore iconic markets such as the Farmer’s Market in Cubao, Quezon City, and the Baguio Market in the Cordilleras. You may engage in hands-on activities like making lumpia wrappers, extracting coconut milk (“paggagata ng niyog”), and many more!

3. Philippine Experience Tours

The Philippines proudly offers the Philippine Experience Tours, showcasing the rich cultural assets across all 16 regions. No matter where you are, there’s a tour available, highlighting unique culinary offerings with defining characteristics.
If Southeast Asia guarantees anything, it’s to welcome you—and then to wow you, in that order. Here, wonder shows up as bowls of piping hot pad thai and plates of skewered satay, served by street food vendors at energetic markets. Or in the quiet of remote landscapes that only locals know about (but that you can visit if you know where to go). It’s a dynamic, intriguing part of the world, and the red thread of it all is the people who call it home. Here are six moments that bring the spirit of Southeast Asia to life.

1. Seek out dragons and coral-dusted beaches on Komodo island in Indonesia

The intrigue of Indonesia hits a high note on the island of Komodo, where pink-sand beaches unfurl around rugged hillsides and tropical forests. Here, in the UNESCO-listed expanse of Komodo National Park, you can glimpse the largest species of lizard in the world: Komodo Dragons. In fact, this is the only spot on Earth where travelers can see these famed reptiles in the wild. It’s a place fit for a bucket list—and a swim, since the coral-rich, turquoise waters off the coast are magical, too. Pair dragon spotting with sun soaking on Pink Beach, and you’ll return home with memories of two uniquely Indonesian experiences.

The beckoning landscapes of Komodo island in Indonesia

2. Contribute to local livelihoods at an innovative dairy farm in Laos

Authentic moments are easy to come by in Laos. Very few tour operators visit this off-the-beaten-path destination, so if you get the chance to go, grab it with both hands. You’ll be rewarded with some of the best community-centric, cultural experiences in Southeast Asia. One of them? Stopping at the Laos Buffalo Dairy Farm, which is the first place in the country to sell buffalo milk dairy products. Expats started this sustainable, ethical enterprise in Luang Prabang after realizing that Laos had an abundance of water buffalo that weren’t being used for milk. So, they began renting female buffalo from local farmers, and the rest is history. Responsible travel and animal welfare are the name of the game at the farm—and visiting is a do-good, feel-good dance, since you’ll be supporting local livelihoods in a direct way.

A responsible travel moment at the Laos Buffalo Dairy Farm
Photo Courtesy of EF Go Ahead Tours

3. Weekend like a local in Ninh Bình, Vietnam

Vietnam is a stunner no matter where you go, but seeing places that the locals themselves seek out is a treat. Cue: Ninh Bình. While most people have Hạ Long Bay on their can’t-miss-it list, not everyone goes to this hidden gem. Vietnamese travelers make their way here on weekends to boat down rivers that wind past limestone mountains—and if anybody knows the best places to go in Vietnam, it’s the locals. Take in all the beauty, and then soak up even more at Bich Dong, a temple-style pagoda that’s surrounded by lotus flowers and vines.

4. Step into the storied traditions of Mae Kampong in Thailand

See rural Thai life in vivid color at Mae Kampong, a village that’s sitting pretty in the mountains east of Chiang Mai. Here, an indigenous hill tribe farms for coffee, mushrooms, and bai miang, a type of tea that has flourished in the area’s fertile soil for more than 200 years. There are scenic cafes that offer bird’s-eye views, and the villagers also collectively own and run an eco-tourism experience that centers around welcoming visitors for homestays. It’s a balanced, beautiful dynamic that guarantees an authentic look at local traditions, and directly benefits the locals who share them. That paired with all the greenery and scenery of the landscape makes for a memorable visit.

5. Gain historical context at the Landmine Museum in Cambodia

Impactful history seeps from every corner of Southeast Asia, and understanding the region’s story starts with stepping into the past. That’s especially true in Cambodia, where decades of conflict have left an unforgettable mark on the country and its people. Traces of the Khmer Rouge regime and Vietnam War are still felt, and some of the darkest moments are laid bare in the Cambodian Landmine Museum. Former Khmer Rouge child soldier Aki Ra founded the organization, which is dedicated to removing landmines and unexploded ordinance (UXO) from the country. Cambodians are still impacted by these dangerous remnants for war, and the entrance fee for your visit supports the UXO’s continued removal.

6. Wind through famous hawker markets in food-centric Singapore

Energy buzzes in what’s known as the Lion City, where futuristic architecture, neon art installations, and chrome skyscrapers sidle up next to orchid-dotted greenspaces and meandering rivers. Even with all those marvels, some of the most culturally rich places are the famous hawker markets. These open-air foodie havens have colonial roots and offer up a diverse culinary scene, which reflects the influences of Chinese, Indian, Malaysian, and Indonesian immigrants. Stalls sizzle with Singaporean staples like Hainanese chicken rice and fried carrot cake, diners chat elbow-to-elbow at communal tables, and daily life ticks along in a whirlwind of shared stories, chess games, and busker performances. Visit for an inside look at social life in Singapore—and discover just why these hawker markets have earned a spot on UNESCO’s list for Intangible Cultural Heritage of Humanity.

Unexpected Holiday Dishes Around the World – with recipes

By: Gina Bang, Director of Marketing, Avanti Destinations

One of the best-loved parts of any holiday is the special food we celebrate with, both savory and sweet. Here, we present 12 holiday specialties – with links to recipes – from countries as diverse as Morocco, Japan, Peru, and Croatia. Interested in sampling them in their native lands? We have suggestions for where to go – usually beyond the capital city to make it even more authentic.

Sponge Donuts (Morocco)

Hanukkah is traditionally celebrated with deep fried foods to commemorate the miracle of one day’s worth of oil lasting eight days. These fluffy ring donuts, “Sfenj” (meaning sponge) have a crispy friend outer layer with a delicate, airy interior, and they are usually dusted with sugar or soaked in honey. Experience them in Casablanca, especially in Jewish communities during Hanukkah. Try this 100-year old family recipe.

Lechon (the Philippines)

Christmas in the Philippines is a grand affair, with Lechon, a whole roasted pig, at the center of festivities. Try it in Cebu, the region known for its distinctive “cebuchon” stuffed with lemongrass, scallions, garlic, and basil. Using a boneless, pork-belly roll instead of a whole pig is easier for most cooks Recipe

Honey Cookies (Greece)

“Melomakarona” are eggless, dairy-free cookies, akin to baklava, enjoyed during the fasting period of Orthodox Christians. Thessaloniki is the ideal place to taste these honey and walnut delights. Recipe

Tamales Criolles (Peru)

Traditional Peruvian Tamales differ from Mexican tamales, using fresh white corn and banana leaves. Another Peruvian Christmas custom called “Chocolatadas” is to distribute gifts and hot chocolate to less fortunate people in early December. Cuzco is the place to go. Recipe

Bûche de Noël (France, Belgium, Switzerland)

This Christmas dessert, symbolizing the Yule log, originated in France’s Brittany. Made with sponge cake, chocolate and heavy cream. Try it in Rennes, capital of Brittany, a city filled with medieval half-timbered houses or Lausanne, Switzerland. Recipe

Mochi Soup (Japan)

“Ozoni,” a New Year’s breakfast soup. Each family has their own special way of making it – with chicken, fish cakes, carrots, taro root, regional spices – but it always features mochi rice cakes. Try it in Kanazawa, known for its traditional districts. Recipe
